Paint your kitchen white and green this St. Patrick’s Day with this delicious recipe for Low Carb, Low Cal Lean Green Irish Eggs. Lean Green Irish Eggs combine two of my absolute favorite uberfoods – egg whites and avocado – into one carb-free (2.5 g net), protein-heavy powerhouse. They literally radiate healthy fats and fiber, in the form of bright green avocado, without crossing the 250 calorie barrier.1
Cook it up, splash some salsa verde on top, and you’ve got a flavor-packed, festive, chartreuse masterpiece in sub-5 minutes flat.

Ingredients

1 Cup/15 Tbsp Egg Whites
-
1/2 Avocado
-
Salsa Verde
-
Salt/Pepper
Directions
Cook & Prep Time: 5 minutes
Servings: 1
1. Cover a frying pan with cooking spray – preferably spray coconut oil – and add 1 cup egg whites. Place the pan over low-medium heat. Add cracked pepper and kosher salt to taste.
2. Once the egg whites begin to solidify (~2-3 minutes), add 1/2 ripe avocado.
3. Smash the eggs and avocado to remove clumps. Stir and let sit for 1 minute.
4. Transfer to a bowl. Top with salsa verde. Enjoy your lean Irish feast.
