2 sweet potatoes (medium-large)
salt & pepper
1Peel & spiralize sweet potatoes (1/4" cut).
2Sautée in olive oil until noodles begin to soften (~5 minutes). Add 1 tbsp. sesame seeds and a few pinches of salt & pepper. Drizzle extra olive oil as needed.
3Preheat the oven to 425º. Allow noodles to sit and cool for 5 minutes. Once cool add 2 eggs and 1 tbsp. sesame seeds. Mix thoroughly.
4Add noodles into the silicone mold. Make sure to press & compact the noodles as much as possible. Put in the freezer for 5 minutes to set.
5Bake at 425º for 15 minutes. Remove from oven and allow to cool before removing from mold.
6Finish by pan-searing quickly on high OR toasting. Sprinkle the outside with sesame seeds (if desired). Enjoy!
